The Schoppernau mountain cheese dairy is Vorarlberg's smallest dairy, rooted in the Bregenzerwald. Each wheel is made from fresh hay milk from 22 farming families and patiently matures in their own cellars. Artisan-managed, efficient: For over 18 years, a cheese-cleaning robot has supported consistent care; a modern cutting machine ensures precise portions and less waste. Following the rhythm of their three-stage farming system, they work in micro-batches – for the clear, alpine flavor they describe as an "echo of our mountains." There is also a farm shop, tastings, and guided tours that bring the landscape, people, and craftsmanship to life.
